There is nothing better with beef stew then a good sourddough bread with lots of butter on it. My mouth is watering just thinking about it. Thinking about how you might make your own sourdough bread might be hard but with a basic sourdough bread recipe where can you go wrong.

Chinese Beef Stew

INGREDIENTS:

4 teaspoons vegetable oil
2 pounds beef stew meat, 1-inch pieces
1/2 cup chopped green onions
2 tablespoons peeled and crushed fresh ginger
4 garlic cloves, crushed
1 (14 1/4-ounce) can beef broth
2 1/2 cups water
1/4 cup soy sauce
1 tablespoon brown sugar
3 tablespoon dry sherry
1 tablespoon chili paste
2 (3-inch) cinnamon sticks
2 cups (1-inch) cubed and peeled potatoes
1.5 cups chopped carrots
1 tablespoon water
2 teaspoons cornstarch
1.5 cup fresh spinach per person
Salt to taste

DIRECTIONS:

Heat oil in slow cooker and add the beef browning sides. Salt to taste
In a pan stir fry the onions, the ginger, and the garlic on high for 30 seconds. Then add the potatoes and carrots.
Stir in the beef broth scraping the pan to loosen the brown vegetables
Add water, soy sauce, brown sugar, sherry, chili paste, and the cinnamon sticks on medium high bringing to a boil.
Combine both mixtures to the slow cooker and cover and cook on low for 6-8 hours.
If stew needs thickening, combine 1 tablespoon of water and cornstarch, stir into the stew at medium heat
Bring the stew to a boil, stirring frequently and cook for 1 minute.
Add spinach and cover and cook until wilted.
Remove the cinnamon sticks.

This homemade Chinese Beef Stew is best served with rice noodles or egg noodles.

Tex-Mex Beef Stew

Ingredients:

1/3 cup oil
6 lb beef chucks cut in 1/2-inch cubes
1 cup chopped onion
1/3 cup chopped garlic
3 cup beef broth
3 cup flat beer
1 1/2 cup water
6 lbs of chopped tomatoes (3 2 lb cans drained)
1/3 cup tomato paste
1 1/2 tbl spoon crushed fresh oregano
3 tablespoons of cumin seed
Salt to taste
Cayenne pepper to taste
Cornmeal to thicken if needed
1/4 cup high-quality chili powder and to taste

Instructions:

Heat 3 tablespoons of the oil on hi in a large heavy skillet. Add the meat to the skillet in batches and adding oil as needed. As the meat is browned move it with a slotted spoon as to drain the oil to a stockpot. Do not put too much beef in the skillet to brown at one time.

Reduce heat to moderately low. Add the chopped onions and garlic and sauté until softened. Add to stockpot with the broth, the beer, the water, the chili powder, chopped tomatoes, tomato paste, and oregano.

Without burning, toast the cumin seed until fragrant in a small skillet over low heat. Grind and add to stockpot.

Increase the heat and bring the mixture to a simmer. Then add salt, cayenne, more chili powder to taste. Reduce heat to maintain a simmer and cook, partially covered, until beef is tender (about 1-1/2 hours). Check occasionally and add more broth if mixture seems dry. Stir in up to 2 tablespoons of cornmeal If chili is too thin when meat is tender. Cook an additional 5 minutes to thicken. Serve chili hot.

This TexMex stew is no beans just all beef, beer and freshly ground cumin to give it characteristic.
